Designed as an intimate, seated gathering, each evening features two curated dinner seatings, bringing guests together around bold flavors, open fire, and storytelling rooted in culture and craft. With the ocean, sand, and coastal air as the backdrop, Colibri guides guests through a menu inspired by tradition, technique, and the elemental power of fire.

Throughout the experience, Colibri will share the stories, influences, and philosophy behind the food—offering insight into their journey, creative process, and the deeper connection between ingredients, fire, and place. The format is immersive and conversational, inviting guests into the rhythm of the kitchen rather than observing from a distance.

Roots & Fire is designed to feel grounded yet elevated—equal parts coastal gathering, chef’s table, and sensory experience—where food, environment, and narrative come together seamlessly.
